SPAGHETTI SQUASH
For many of us excess carbs is something we struggle with, moreover, getting enough vegetable servings every day can seem out of reach. This spin-off of the zucchini noodles may be similar but continues to add variety and addresses multiple diet issues while staying quick, affordable, DELICIOUS and easy!
For todays meal:
1. THE DAY BEFORE: Purchase a spaghetti squash and some sweet potatoes (these will be for another meal). Cut your spaghetti squash lengthwise in half, spread a little olive oil and salt/pepper on each side and lay facing-up on a cookie sheet in the oven. Roast at 400 degrees for about 25 minutes or until tender and lightly browned (if preferred). The sweet potatoes (or any other vegetable you enjoy) is a foresight into another meal for the week. You can chop these up and roast at the same time as your spaghetti squash for convenience. Put these aside and store for tomorrow or the next day.
2. TODAY: Pack one half of your pre-cooked spaghetti squash with a bag of pre-made, frozen spaghetti sauce from your freezer (see previous posts).
3. Take a fork and scrap out the squash from the shell onto your plate. Pour your sauce over top and throw in the microwave to heat until warmed.
4. Shred some parmesan cheese on top (if preferred) and enjoy!
Make it fancy: If you happen to have any sautéed onions or peppers, or any fresh herbs (ex. parsley)from your previous weeks meals, add these on top to spice it up!
